It’s been a while since I’ve done any baking but one of my goals this month was to get baking again (bake a cake is what I actually put in my journal) so here I am with another recipe for cakes, rainbow cakes to be exact.
100g salted butter
95g caster sugar
100g self-raising flower
2 free range eggs XL
For the topping:
Cake Decor Unicorn Frosting
M&S Rainbow Belts
Swizzels Rainbow Drops
Makes: 12 small cakes
Mix the butter and sugar together with a spoon then add the 2 eggs and mix it all together with an electric whisk. Add the flour, stir it in then add a small amount of milk and stir it again until it’s all mixed in.
Preheat the oven to 180c.
Put your cake mixture into cases and put them on a baking tray, once the oven is warmed up bake them for approximately 18 minutes.
I started off with the timer on for 15 minutes then put it on for another 3. I checked them with a skewer when they were out of the oven to make sure they were cooked through properly.
Leave them to cool…
I baked mine before dinner so they could cool while we cooked/ate dinner then I decorated them after. I only decorated 5 because that’s the number we were going to eat straightaway.
I put some frosting on each cake, added half a Rainbow Belt to each one, along with some Rainbow Drops.
It’s great that the frosting comes with a nozzle so it’s super easy to use, straight from the tube! It’s a pretty blue/pink two-tone colour as well which is really cute and it’s raspberry flavoured as well.
